3 Salt Society Exclusive Recipes!

Have you heard of our salt-of-the-month club, The Salt Society?

Every month, we send out our curated selection of salts, spices, grinders, caramels, stickers, and recipes to our super sweet members! For the beginning of March, we want to give you 3 easy recipes to welcome in spring-- all of which happen to be part of the exclusive recipes we send bi-monthly to our Salt Society members!

Sour Cream and Onion Mashed Potatoes (with Garlic & Friends Blend, From Deli Month!)


Ingredients:
(Makes enough for 2-4 people!)

2.5 lb. Yukon gold potatoes, peeled, cut into quarters (can be a mix of whatever potato variety you want... but I find Yukon Golds are the creamiest and fluffiest!)
2 T Garlic & Friends Blend (more to taste)   
1/2 cup sour cream
1/2 stick unsalted butter
3 green onions, thinly sliced, plus 2 scallions for garnish
2 shallots, thinly sliced 

Boil the potatoes in salted water until tender. Once tender, drain and mash. Add in chopped green onions, butter, sour cream, Garlic & Friends Blend, and serve with butter and a generous sprinkle of green onions. Add more Garlic & Friends if not salty enough. 

Smoky Fry Sauce (with Madrona Smoked Pepper from our Get Ready to Grind Month!)

Ingredients:

3/4 cup mayonnaise

1/3 cup ketchup
2 tsp pickle juice
Several hearty grinds of our Madrona Smoked Pepper (plus more to taste!)

Combine all ingredients and mix well with Smoked Black Pepper-- I would try a couple of grinds, then finish with another grind for garnish. Serve with hot, crispy fries or potato wedges! I also love using this as a burger or patty melt sauce.

Kimchi Pancakes (with Kimchi Blend from our Passport to East Asian Month!)

Ingredients:

½ pound kimchi, chopped (small pieces preferable)
2 tablespoons of kimchi brine
3 scallions, chopped
½ teaspoon sugar (I recommend our Madrona Smoked Sugar)
2 tablespoons Kimchi Blend (plus more for a final sprinkle!)
½ cup all-purpose flour
½ cup water
4 tablespoons neutral, high smoke point oil

Kimchi pancakes take some practice, but the mistakes are delicious! Combine the Kimchi Blend, scallions, Madrona Smoked Sugar, flour, water, and chopped kimchi. Stir until well-combined. Heat a large skillet with a neutral oil of your choice-- classically, you can make a large, 12-inch pancake to cut like a pizza, but I prefer making batches of smaller sizes. Pour a cupful of the kimchi mixture into a pan, and smush it flat so it becomes a small pancake. Let cook on both sides until crispy. Garnish with scallions and a hearty sprinkle of Kimchi Blend! I also enjoy a dash of soy sauce on top.
